The way we are eating under this lockdown is a cause of concern for most of us. After all, we are not as active as we used to be and stress eating is leading most of us to gorge on carb-heavy treats.
Frankly, we are also worried about those extra kilos we are gaining while being homebound. When our moms serve us piping-hot meals with extra butter and ghee, then who can resist right?
But we still have to draw a line. And that’s why we have discovered a very simple and healthy recipe that you can enjoy sans the guilt. Also, we promise that it only features ingredients that are readily available in your kitchen.

Presenting: cold rajma salad which takes just a few minutes to whip up.
250 gms boiled rajma
1 onion, chopped
1 tomato, chopped
1 boiled potato, chopped
1 capsicum, chopped
1 cucumber, chopped
9-10 coriander stems, finely chopped
4-5 mint leaves, finely chopped
20 gms roasted peanuts
10 gms almonds
10 gms cashews
10 gm walnuts
10 gm raisins
Juice of 1 lemon
Salt, pepper, and chat masala as per taste
1. In a bowl, add the boiled rajma, chopped onion, tomato, potato, capsicum, cucumber, coriander leaves, and mint leaves. Toss the ingredients very gently.
2. Now add peanuts, almonds, cashews, walnuts, and raisins. And toss the mixture again.
3. Now to season this salad, add salt, pepper, and chat masala and toss everything again.
4. Keep the bowl in the fridge for 20 minutes and serve.
Tasty tip: You can use this salad as a topping for nachos too.
