Here’s a beetroot raita recipe that is easy to make and super healthy

Raita is a condiment that finds a commonplace in our meals and comes in multiple variants, from cucumber to spinach-based preparations. Beetroot raita is one such variant and is bound to go extremely well with either rice, roti or even kabab based meals. What’s more, it has the capability to not just boost the taste of your meals but also boost your overall health.

Beetroot is a wondrous ingredient with a rich nutritional profile. This vegetable contains a wide range of essential vitamins, fiber, antioxidants and minerals which contribute to boosting cell health, metabolism, bone growth and immunity system.

Beetroot also happens to be low in calories (One cup/136 grams of boiled beetroot contains fewer than 60 calories) and high in fiber, making it an ideal fit for preparing a healthy dish.

Yoghurt/curd, on the other hand, though seemingly a simple dairy product, is loaded with essential nutrients like calcium, vitamin B-2, vitamin B-12, potassium, and magnesium. Curd is light on the stomach and easier to digest than milk, and contributes towards overall immunity, bone strength and healthy skin.

Serves: Four people

Ingredients:
  • 1 beetroot (peeled and grated)
  • 2 cups yoghurt (whisked)
  • Black salt to taste
  • 1 tsp roasted cumin powder
  • Red chilli powder to taste
  • Chaat masala to taste
  • 1/4 cup onion (chopped)
  • 1 teaspoon green chillies (chopped)
  • 2 tablespoon coriander (chopped)
Preparation:

Step 1: Peel and grate the beetroot and boil it in water till it’s tender.

Step 2:  Blend the boiled beetroot and then combine and mix whisked yoghurt, beetroot, salt, roasted cumin powder, red chilli powder, green chillies, onion and coriander leaves.  

Step 3: Keep the mixture in the refrigerator for at least 2 hours for it to set and then serve it chilled. 

While preparing the raita, it is important to note that roasted cumin powder is highly aromatic and has an intense flavour. To make roasted cumin powder, heat a skillet over low heat and dry roast cumin seeds (1 cup) for 5 to 10 minutes, stirring occasionally until the colour of the cumin changes to a dark brown. Do remember to turn off the heat so that the cumin seeds cool down before blending the seeds to make the powder.

You may season beetroot raita in a number of variations, including cabbage or even dried mint leaves (depending on the season).
